1. I still haven't taken down our Christmas tree.... Oops! Tonight, maybe? {hopefully?}

Happy New Year!

2011 was a challenging year for Joe and I. While there was plenty of good, there was our fair share of not-so-good and looking forward, 2012 thrills me based on that alone!

Joe, my best friend Sarah and myself had dinner at Pepitos and then joined Joe's best friend John and his girl friend for a social gathering {not quite a party} at her downtown loft. NYE 2011 did teach me that there is an amazing thing called Hangar 1 - Blueberry flavored - vodka. YUM, please, go buy this! It tastes like blueberries, no vodka burn at all.

I made no resolutions. I'm going to continue to try and be healthy, be happy and continue to learn and grow. I'm hoping that 2012 has more to bring than I can even imagine.

Santa brought me a new toy...

...a 50mm f/1.8 lens for my dSLR!

The lens is fantastic in low light - but I still need to work out my own abilities a bit more. Because you can snap such a short depth of focus, I need to really work at getting the proper focal point before snapping the shot. There have been plenty of throw-away photos, but the photos I have captured look drastically different {look at the beautiful background blur!} than photos taken with my standard lens.

I need to have a photo-taking day with some of my other dSLR friends! I feel like we learn so much from each other's newb knowledge.

I hope Santa brought you all something equally exciting and desired!

Happy Holidays from our home to yours!

We have a busy few days ahead of us - but we are looking forward to every minute of it. Time spent with family is always time that we enjoy. This holiday season is a bit difficult for us, but we are trying to practice being of 'good cheer.' There is truly so much we do have to be cheerful over!

I hope you have all been nice, that Santa leaves you everything you need and some of what you want, and that you are enjoying the season!

Today is one of these days. Everything will be alright. My work scheduled me off today - not sure if that was a good plan or not. Thankfully, Joe took the day off of work and we are spending today together. Trying to keep my mind off of what isn't. I appreciate all of the good thoughts being sent our way. I never imagined something like this would happen to me/us, and I never could have comprehended how much it hurts. <3

My apologies go out to all of you in blogland - I've been missing in action. The combination of a crazy work schedule, general holiday chaos and a bit of blues over my upcoming estimated due date is really getting to me, and the blog has suffered. A little update on our household..

We are {sparingly} decorated for Christmas. All I've done was decorate our tree, put out our stockings and one other decorative tree made from sticks and sparkles. I didn't do much this year, but what I've done has been perfect.

Our cards are ready - just need to be addressed! {so if you got an address request email from me, don't be afraid! It isn't spam.} I can't wait to reveal the card - our friends L&N took our photo and it makes me laugh and smile whenever I look at it!

Shopping is... coming along.

Christmas cookies are gone. :) Whoops. We have an 'Open Cookie Policy' in this house, and without an upright freezer to store things, we've munched on all of our cookies. We enjoyed the treats, they brought us holiday cheer, and we spaced out our Christmas calories by eating cookies early. Right?!

Holiday parties are in full swing! We had one last weekend (thanks H&A!!) and we have two parties this upcoming weekend {three if you count my sister's birthday on Monday.}

Work has been crazy for both Joe and I. I'm looking forward to things being a bit more mellow in the last few weeks of the year. :)

Joe and I took Chloe and Jenson to the Santa Paws event at Adogo Pet Hotel last weekend. Adogo hosted, Minnesota Boxer Rescue benefitted, and Amber with Modern Life Photography donated her time and fantastic photography skills for the event.

Pending Legislation - Removing Financial Barriers for Infertility Treatments

I borrowed this from a blog that I read, she borrowed it from a message board she reads:

Just wanted to pass this along since we all know how financially devastating (aside from the emotional impact) this whole infertility process is. I just received this update from the "Resolve" infertility non profit organization. Please take 2 minutes to click on the link below and simply fill in your contact info which generates a form letter to your state rep automatically pushing them to pass this legislation. It couldn't be any easier. I then received a form "response" from my state rep via e-mail. If they get enough of these, it will make a difference. You can even add a few comments to personalize the form letter to make it more impactful. If this passes in 2012, you will be able to deduct the cost of fertility treatments dollar for dollar on your taxes. I would guess that it would be retroactive to include all of 2012. Please take the time to make your voice heard whether you have insurance coverage or are now paying out of pocket. You never know how your situation can change. We CAN make a difference!

John Lewis (GA) for introducing a bill in the U.S. House of Representatives that would provide eligible taxpayers a tax credit for the out-of-pocket expenses associated with infertility medical treatment. Co-sponsored by Rosa L. DeLauro (CT), William Keating (MA), and Richard E. Neal (MA), the appropriately named the “Family Act of 2011,” HR 3522 would apply to expenses related to in vitro fertilization and treatments to preserve fertility for cancer patients. The “Family Act of 2011”, HR 3522, is a companion bill to S 965 which was introduced in the U.S. Senate in May 2011. Advocates can now push for action on the two bills including bipartisan co-sponsorship, Committee Hearings, and movement on the Bills in both chambers.

Joe and I have a doctor appointment on Monday to discuss some health issues that may continue to make trying to get pregnant a bit difficult. We aren't quite ready to open up to the entire internet and talk about what those health issues are. At this point we don't know if we'll need treatments to get {and stay} pregnant. However, if we do need to have any treatments, it will be all paid out of pocket... which is terrifying, expensive, stressful.

A bill like this becoming a law could take away much of the financial fear and stress of pursuing treatments, if that is a direction we learn we need to go. Please, even if this issue doesn't touch you personally, write to your legislators. Please support this legislation. There is a chance that this becoming a law could benefit Joe and I. There is a great chance that there are other people in our lives {people that aren't sharing their struggles publicly} that could be impacted by this as well. It only takes a minute, but the impact is great.

The annual Christmas cookie baking begins! This past weekend we made several of the family favorites...

{Salted nut rolls - dare I say better than Pearsons?}

{Grandma Mac's sugar cookies. Soft, cake-like, yum! A labor of love - they aren't easy to make.}

{Spritz cookies - Dad requested. Our first time making them. The recipe needs tweaking, but so far not bad!}

{Wreath cookies, Dad's favorite! Corn flakes, green food coloring, mashmallow, candies.. Messy, but good!}

{Peanut butter kiss cookies - Joe and my step-mom Amy's favorite. Really, anyone's favorite - you just can't go wrong!}

Still on the list: chocolate krinkles, monster cookies and peanut brittle. I'd also love to dip some pretzels in chocolate and maybe try some truffles. We just need more freezer space so we can store our cookies until the holiday!

2011 is a year of deep but simple gratitude.

Joe - I am thankful that we've been able to face life head on, together. This year has been emotionally trying on both of us. I'm thankful for our abilities to admit defeat, ask for help, and the joy to know when to celebrate the victories. I love you.

Our fuzzy family - just this week, Jenson made our morning with the excitement he had when he was allowed into bed to snuggle. The unconditional love that our pets give me is so gratifying.

Family - I couldn't ask for more supportive and caring people to call my family. I'm eternally grateful for how amazing you've been.

Friends - More than last year, more than words, you've been there. Thank you for challenging me, supporting me, calling me out and holding my hand.

I'm thankful for my job, the many creature comforts that fill my daily life and the technology that makes my life so easy. I'm thankful for conversation. I'm thankful for books, the internet and my iPhone. I'm thankful for La Vanilla hand cream. I'm especially thankful for wool socks. I'm thankful for my recent trip to NYC.

One Month

One month. I would be due to have a baby in one month. I'm trying to let go.. trying to stop holding on to what hurts, but it's a struggle. This is a real struggle for today. I am struggling to put my heart in a good place. My heart wants the dreams that left me on April 28th. I don't want to go through the holiday season wishing for something that isn't. I don't want to replace - I am forever changed after our loss - but I want to start new. I want another chance. I'm ready. I've been ready.

The Little Things

Joe shared with me today that if I am sleeping on his side of the bed, all he has to do is tickle my feet to get me to move over to my side.

This little thing makes me laugh and smile.. and makes me so grateful that he doesn't wake me up in the middle of the night! :)

Emotional Stream of Consciousness

I had a haircut yesterday and after my service I was booking for 6 weeks in the future. December 22nd. The milestones come, whether I want them to or not.

I can't believe I am nearing the estimated due date of my first pregnancy/miscarriage and I haven't conceived again. I never imagined it would play out this way!

I am happy. Truly happy. I just wish things were different.

Although expanding our family hasn't happened as we hoped, this process has strengthened and intensified our marriage. There is a different sense of clarity and love that I don't know that I felt before this process started. The love has always been there, but there is a new, different love. For this I am infinitely grateful.

Despite struggling for answers, I feel calm and zen about the process right now. {perhaps I can thank acupuncture and heightened self awareness for this state of being?} I just need to continue to take care of myself because most of this is out of our control. Staying healthy and happy is a priority for ME. It may not have any influence on my ability to become and stay pregnant, but it makes me feel good and for that, it's worth it.

Joe confirms on a regular basis that once the time comes, he's going to be a fantastic father. I get excited and emotional thinking about it!

Sometimes, it just helps to get my thoughts out. I am so thankful that the people in my real life {and internet life, hi readers!} allow me to capture the attention of their ears every now and again.

My New York Trip - Part 3

Sunday - The NYC Marathon day! Sarah lives off of 4th Avenue in Brooklyn so we were just steps away from mile 6. Sarah knows several people running the marathon so we cheered on runners in the morning. Two men ran by us, tethered together. One of their shirts said "blind runner." Seriously!! Inspirational. After brunch at Chelsea Ristorante, Laura and I browsed the Chelsea Market and then walked the High Line Park. The High Line is possibly my favorite thing in NYC. Laura and I grabbed gourmet ice cream sandwiches {snickerdoodle cookie with cinnamon ice cream!} from Melt Bakery's cart. It was a bit chilly for it, but they were awesome and so worth the chill!

Late afternoon was spent in Kew Garden, Queens. Laura showed me her new neighborhood while we walked her dog Popeye. After an interesting drive back to Brooklyn {Laura has a car, GPS doesn't play nice in NYC} we had lunch at a Bklyn fav, Korzo.

Monday - My last day! My morning was spent at Brad's Cafe - getting caught up with Internet life, blogging, and planning my week. I spent the afternoon window shopping in the Flatiron district, and I endured the 40 minute line for a caramel shake from Shake Shack {it was worth it.}

...and then I went to the airport - an adventure on it's own! I feel like I need a vacation to recover from my vacation.

My New York Trip - Part 2

Friday - Sarah's birthday! Sarah worked, so I explored downtown in the morning. We met up for lunch at Dojo near NYU for lunch with Sarah's coworkers Jean, Howie and Hannah. Dinner was at Lombardi's, NYC's oldest pizzeria with Jean and her significant other Jack. We then met up with a bunch of friends at a bar called Home Sweet Home. HSH is a basementy bar that plays rockabilly-esque music - very cool. The night was danced away - very fitting for Sar's party!

Saturday - I booked tickets to the National 9/11 Memorial. {seriously, you have to book tickets in advance. No one tells you this, so don't show up expecting to get in to see the memorial. It is completely worth seeing however, so take the time to schedule it if you are in the area.} Sarah and I have completely different 9/11 memories - both high school seniors, but Sarah was attending college a few hours away. We were both moved by the memorial, however. It was powerful, reflective and so serene. I was misty-eyed walking through much of the memorial park.

After the memorial we booked it up to Grand Central Terminal and caught a Metro North train to New Haven for Joe's cousin Jeff's 40th birthday party! Our evening was spent eating, drinking and laughing with Jeff's beautiful wife Sarah, his closest friends and a few clowns. {seriously. Jeff went to Clown College!} Mustaches were worn by many and an Oreo cake was nibbled on by all. So great!

My New York Trip - Part 1

My NYC trip was fantastic. The main purpose of my trip was to celebrate my best friend Sarah's 28th birthday. Fortunately, Joe's cousin Jeff also had a birthday {40!} to celebrate and my friend Laura just moved to NYC so I could have a multi-purpose trip.

Wednesday - My flight got into JFK around 10:00 am. I took the AirTrain/subway to Washington Square, wandered a bit and eventually made my way to Sarah's work. We grabbed lunch at Crepeaway {yum! I need to make crepes more often...} and I window shopped while Sarah worked. Sarah, Laura and I met up with MN friends of mine - David and his girlfriend Lacey - at Mario Batali's restaurant Lupa {fantastic! Perfectly prepared food, fancy but not pretentious.}

Thursday - A day of theatre! I won the Conan lottery, so we attended the taping of his show after lunch. It was such an awesome experience! {If you watched, we were across the aisle and about 10 seats in from the Stewart/Colbert bit.} Triumph the Insult Comic Dog made an appearance with a trip to Occupy Wall Street, Louis C.K. was the guest and Conan performed a wedding. Specifically, the wedding of Scott {a costume designer on Conan's show} and David - the first ever same-sex wedding on late night television. The set was decorated with an autumnal chuppah, about 30 wedding guests and the grooms looked fantastic. I was moved - a few tears were shed! We had dinner at 5 Napkin Burger in Hell's kitchen with Sarah's friend Howie and attended a Broadway preview performance of Venus in Fur. The show was powerful. Provocative, sexy, complex and a touch risqué. The 2 actors remain on stage for the entire 90 minutes, no intermission, and the performances they put on were fantastic. A must see!

How to Carve a Pumpkin

Thanks, internet! After seeing other bloggers use painting tape to mark pumpkins for painting... I gave it a try, and it really makes pumpkin carving so much easier!

The tape stays in place, you can drawn on it {and if you don't like what you drew - slap more tape over it and draw again!}, and it peels off easily when you are done. I don't know that I'll carve a pumpkin any other way from now on.

I was feeling a bit sentimental - so I carved up a love pumpkin with our initials. Maybe Joe will give the other pumpkin a more traditional face..

Lemon Chicken Orzo Soup

I've been feeling under the weather for about 10 days - ugh. Nothing has sounded very appetizing, but I found a Panera Bread soup that was fantastic and I decided I wanted to try and make it myself. So..

Lemon Chicken Orzo Soup adapted from Food.com

3 boneless skinless chicken breasts, cooked
2 tablespoons olive oil
6 carrots, grated and cut into pieces
3 stalks of celery, cut into pieces
1 cup of onion, diced
2 cloves garlic, minced
1 teaspoon fresh thyme
2 bay leaves
8 ounces orzo, uncooked
8 cups chicken broth
3 lemons-worth of fresh juice
zest of 3 lemons
1/2 cup fresh parsley, chopped
salt and pepper to taste

Cook your chicken breasts - I poached mine. You could also use leftover rotisserie chicken if you want to skip this step.

In a stock pot, combine olive oil, onion, garlic, carrot and celery. Simmer on medium-low until onions start to sweat. Add all ingredients to the stock pot except the lemon juice, lemon zest and chicken. Turn heat up to high and bring soup to a boil. Once soup comes to a boil, add the lemon juice, zest and chicken. Boil until orzo is cooked. Season to taste. Serve, or ladle into containers and freeze for weekday lunches.

Housekeeping

Joe and I are the first to admit that our housekeeping skills are lacking. We are fantastic at cleaning up the house for a party.. but we suck at the day-to-day upkeep. To a point that we are embarrassed about it.

I've decided to type, laminate and post {on the fridge!} a housekeeping schedule. Something to keep us accountable, something to make cleaning our house manageable and part of our daily life. I don't want to spend more than 30 minutes a day cleaning, so I hope a daily breakdown of duties will help us maintain that 'under 30' goal. Our tentative plan:

I Am The Face

I am the face of miscarriage.

October 15th is National Pregnancy and Infant Loss Awareness Day in the United States and Canada. One of out every four women will experience the loss of a pregnancy or a baby at some point in her life. I am one of these women.

Trying to conceive is a somewhat quiet subject. I am willing to say that most married/seriously committed women my age get questioned on a fairly frequent basis about when they are going to have children. If my peers are anything like I was - they've answered "When the time is right!" "Eventually..." "I'll have one now if you'll start the college fund!" or "9 months after I get pregnant!"

All jokes aside, it's hard to tell people when you are going to start a family. The pressure to 9 months later give birth to a child make it really difficult to tell people that you've started trying to conceive. Especially when things don't always go to plan.

Joe and I were {naively, blissfully} fortunate to get pregnant pretty quickly. The pregnancy ended at 6 weeks. My miscarriage was awful - both physically and emotionally. The emotional wounds are still raw.

I am 1 in 4. I am bravely talking about my pain. I hope that hearing about my experience will do two things - 1. make it easier for other couples experiencing miscarriage {or infant loss and stillbirth} to ask for support - and - 2. help others on the outside feel more comfortable talking to and be supportive of women {and men}, their timeline for starting their families, and their sometimes difficult journey to becoming parents.

Please join me in supporting I Am The Face. Their goal is simple: spread awareness of pregnancy/infant loss, and raise support for those who are affected by it.

Fall To Do List - Part 3

Ok friends - here's the list! We've made a little progress since my last update, but not much.

~~Till in rotten veggies that have fallen into the garden dirt~~ Done!
~~Remove garden fencing and replace with winter fencing {orange snow fence? or any suggestions?}~~ Half Done! We ran out of daylight - going to work on this Monday evening.
~~Spread some fresh dirt and grass seed on our lawn's bare spots~~ Done and it's starting to sprout! So cute!
Plant the north side of the house Soon! My work has plants to give up, I just need to bring them home.
Wood chip the north side of the house Once we plant it, we can woodchip it!
Fill planters with fall and winter arrangements Not yet.. but ooh! Did anyone see the Mummy pumpkins on The Today Show this morning? Love them!
Paint or refinish at least 1 of the 2 dressers I have brought home this past year
Wash the windows
Paint the front door {plum? yellow?}
Clean my closet and donate clothing I don't wear

Baked Chicken with Dijon and Lime

We made Skinnytaste's Baked Chicken with Dijon and Lime for dinner on Sunday.

Yum! We've used Dijon and mayonnaise as a chicken marinade before, but the addition of garlic and lime gives the chicken a tangy bite - unexpected but really good! I used boneless skinless chicken breasts instead of chicken thighs. I didn't have any dried parsley so I sprinkled Penzeys Herbes de Province on top instead.

Baked Chicken with Dijon and Lime from Skinnytaste.com

4 boneless skinless chicken breasts
3 tbsp Dijon mustard
1 tbsp light mayonnaise
1 clove garlic, crushed
1 lime squeezed, with zest
3/4 tsp fresh ground pepper
salt
dried herb mix

Preheat oven to 400°. Rinse the chicken and remove the skin and all fat. Pat dry;place in a large bowl and season generously with salt. In a small bowl combineDijon, mayonnaise, lime juice, lime zest, garlic and pepper. Mix well. Pour over chicken, tossing well to coat.

Spray a large baking pan with a little Pam to prevent sticking since all the fat and skin was removed from chicken. Place chicken to fit in a single layer. Top the chicken with dried parsley. Bake until cooked through, about 30-35 minutes. Finish the chicken under the broiler until it is golden brown. Serve chicken with the pan juices drizzled over the top.

What we've been up to..

We've been busy! Forgive the lack of blog posts lately.

Joe has been working on cars, slinging dirt around our back yard, working both jobs and trying to squeeze in some relaxation time in between.

I have been working, attending cooking class, spreading the dirt that Joe has been slinging, and trying to catch up on some reading.

We have a BUSY weekend ahead of us - a wedding, a post wedding lunch, more yardwork and some menu planning. Depression

In my personal life, I've never been shy about the fact that I suffer from depression. I've briefly touched on it here, but never really gotten deep into the details of my depression on this blog.

I am medicated and most of the time doing really well, but recently I've been struggling. I've always said that Winter is hard for me. The time just after my birthday through April is especially hard. Looking back on my writings, my pictures and my memories, I'm realizing that Fall is equally challenging. Although I love Fall, I have had a lot of mental illness-related events take place in this season.

This post, by "Mommy-Blogger" Heather Armstrong at Dooce.com, really got me thinking.

Keep an eye on yourself and the people around you. If you notice someone might be going through some tough stuff, or even just acting a bit different, please - reach out. If it's you - ask for help. If it's someone around you - be there. Keep an eye on the people you love and make sure they are well. Not everyone has the strength, ability and courage to admit they are depressed. Not everyone is able to ask for help. Don't prod and poke, but offer a kind heart and if they chose to speak up, an open ear. If you fear someone is in danger of hurting themselves, call 911 and get in contact with someone at an organization for suicide prevention and mental illness, such as SAVE or NAMI.

Despite my medication and my best attempts at good nutrition, quality sleep and enough water, I feel myself sliding into the helpless, manic and anxiety-fueled despair that is depression. I know I can fight and claw my way out of this. EDIT: Although I feel a little less stable than I prefer to be - but don't be alarmed - I am ok! I am not using this as a cry for help, although re-reading it seems that way :) I just know there are people out there that are unable to be open about issues like this. So - Just please, if you know someone that you think might be suffering, be there for them.

Three Bean Chili

Inspired by the Skinnytaste Crock Pot 3 Bean Turkey Chili, we whipped up our own batch of tummy-warming fall chili.

Three-Bean Beef Chili

1 pound low-fat ground beef
1 yellow onion, diced
1 jalepeno, seeded and diced
1 28 oz can diced tomatoes
1 16 oz can tomato paste
1 8 oz can of diced chilis
1 15 oz can of chickpeas, undrained
1 15 oz can of kidney beans, undrained
1 15 oz can of black beans, undrained
2 tablespoons chili powder

Combine the raw ground beef, onion and jalepeno in a cast iron skillet {or whatever you have on hand} and brown until cooked. Drain any extra liquid {fat} in the pan.

Combine all of the ingredients in a large stock pot. Cook on medium-high heat until completely warmed. Or if you'd prefer a crock pot version, combine in a crock pot, turn on high and let it sit until you are ready to eat, 4-8 hours.

Top with shredded cheese, scallions, sour cream {ssshhhh, I use greek yogurt, but Joe won't give up his sour cream} and enjoy!

Cinnamon Roll Pancakes

I've seen these make their rounds on the blogosphere - but it was due time that we made pancakes, so fun novelty pancakes were it!

Cinnamon Roll Pancakes

A batch of pancakes - I used this recipe.

1 stick of butter, softened almost to the point of being melted

1/2 cup brown sugar

1 tablespoon cinnamon

Recipe found here.

Combine soft butter, brown sugar and cinnamon in a pastry bag or large ziploc style bag. I mixed it in the bag, squishing it between my hands to both melt and mix together. Once mixed and melted, push the mixture to the bottom/corner of the bag and cut off the tip.

Make your pancakes as normal, but immediately after pouring onto the skillet, swirl some of the cinnamon mixture onto the top of the pancake.

Finish baking, and enjoy!

Dave's BrewFarm

After hearing a story on MPR I 'surprised' Joe with a trip to Dave's BrewFarm for a little pre-anniversary date. Joe has many passions - but beer and wind farming are two of his biggest! He always jokes that our little suburban home will someday house a wind turbine. {while I love the concept, I don't think it'll work for us in our current home!}

Just over an hour away from Minneapolis, it was a perfect day trip for a Sunday afternoon. The BrewFarm is open about 2 weekends each month - Dave updates his blog with the available weekends and also updates there if there are last minute changes to the schedule. They don't have any food available {just a few bowls of peanuts on the bar inside} so they encourage you to bring snacks, some have even brought their own grills to make an evening of it! Attempting to make our trip a bit more special, I brought cupcakes {betty crocker's silver white cake with grand marnier buttercream frosting!} to have with our picnic.

Joe tried the BrewFarm flight - eight 2 oz pours for $10. {cash only, no atm on site so come prepared.}

I liked all of the beers I sampled. The flavors were unique - not easily compared with commercially known beers. Tastes of carrot, black pepper, cardamom... interesting, but good flavors! Joe picked up a 1 liter growler for $15 {$5 refundable when you return the glass bottle} so I'll be able to have more than a taste since I won't have to worry about driving.

Dave and his wife Pam have a really fantastic set up. The house is above the brewery, and they operate on geothermal heating and cooling, with the 120' wind turbine for energy. The rain gutters flow underground to help maintain the geothermal system. The 12" concrete walls kept the brewpub an incredibly comfortable temperature.

I hope we can make visits to the BrewFarm a somewhat regular event. The beer is brewed in 10 gallon batches, and appears to change somewhat frequently. How fun to watch {and taste!} the craft brew as it happens with the seasons. If you go - enjoy!

September 13, 2008.

Three years of marriage - where does time go!?

Emotion and passion. I wrote about this last year, but these words seem to be the best fit for this year too. Emotions are the feelings, but passion is the determination to make it work. We are determined. We have shown each other over the past year that we can get past any bump in the road. We have shared a lot of laughter, our fair share of frustration and more than our fair share of tears. We've also shared a tremendous amount of love.

We planted this tree - an anniversary gift from Joe's parents - last year. I know I risk sounding like Andie in How to Lose a Guy in 10 Days, but I look forward to watching the tree grow.

It started like any other day. Dressed in Hutchinson Tiger spirit gear, I'm almost positive my friend Amy picked me up for school in her white Chrysler with the fuzzy rainbow steering wheel cover.

I was late for my first block class because we had a homecoming pep-fest that day, and I abused the student council get-out-of-class-free privileges. On my way out of the gymnasium {towards class, honest!} the Dean of Students {Mr. Ross, anyone from H-town remember him!?} was standing in the foyer, watching the TV that is normally programmed with school announcements. Except it didn't have school announcements on it - it had news coverage of a plane crash into a tall building in New York City. Myself, a few other students and a handful of school staff stood watching the news coverage for no more than a few moments when we saw - live on TV - the second plane crashing into the World Trade Center. Stunned, speechless, and on the verge of tears, I watched for a few more moments before rushing off to Statistics class. I walked into the classroom, mumbled that there has been two huge plane crashes in New York City, and we turned on a TV.

I don't remember what happened at the pep-fest that day. I knew it must have gone on, but I only remember standing in the foyer watching the news coverage. Nothing seemed important anymore. Slowly, details began to emerge. News of additional crashes - the Pentagon and a field in Pennsylvania. The Twin Towers fell. Terrorism. Recollection of memories from my freshman year - I went on a choir trip to New York City and somewhere in my box of film was a strip of negatives showing the very Towers that no longer existed. Rumors that we would run out of gasoline for cars. I remember going to the store for bread and milk. Fear.

That evening, a group of friends and I decided to make red, white and blue ribbons that we sold during school and during the homecoming festivities. We ordered several pizzas and sat in the balcony of Godfather's Pizza, cutting, looping and pinning ribbons. I don't remember how much money we raised for the American Red Cross, but I remember being impressed by the amount and I remember feeling really good that we did something to help.

I don't remember the pep-fest, the powderpuff football game, the friday night football game, the homecoming dance, or anything else that was important to me on the date of September 10th. I do remember feeling afraid but also feeling proud to be an American. I remember feeling close to the people in my high school that I wasn't otherwise friends with. I remember spending a lot of time in silence.

In the weeks, months and now years, September 11th 2001 has been a moment that truly changed me. I discovered how fiercely I cared for the people in my community - especially those that were suddenly looked down upon as enemies because of their country of origin or religion. I examined who I really felt I was and decided against going to school at Northwestern. {verdict is still out if the decision to skip traditional college was a good idea or not.} I examined by political and social views. I decided I was very much anti-war and very much pro-civil liberties and equality.

I have become an adult in a post-9.11 world. Terrorists, color-coded threat status, 3 ounce liquids, war... all part of the only adult life I have ever known. Tragedy, unspeakable horror - in America. Never did I imagine I would know that day.

Although I personally never knew any of the people who died in the 9.11 attacks, I will always remember them and hold their stories close to my heart. Like the rest of our nation, I will never forget.

September 10th

Inspired/moved/in tears after listening to NPR's 9.11 coverage, this was my September 10th.

September 10, 2001 - the perfect fall day. I was a senior at Hutchinson High School. September 10th was the first day of homecoming week - and I was a senior so it was our time! A one-time cheerleader, I was f.i.l.l.e.d with school spirit. It was most likely a dress up day {pajama day? retro day?} and I am sure I had taken it to the furthest of extremes. I was a member of the student council and was preparing for a big pep-fest the next day.

The only drama in my life was self-absorbed and self-created. The {way hot} guy I had a crush on was in my first block Statistics class and I so wanted to ask him out but school cliques prevented that from ever happening. I was working hard to convince my friends that the homecoming dance would be cool {not lame, as everyone believed} and I needed people to go with me since my student council position made it basically mandatory. I was hoping that the glitter spray that I had decorated my Class of 2002 t-shirt with would be dry enough to wear it at the powderpuff football game. I was excited because I had been accepted to my first pick for college {Northwestern Bible College - yeah, didn't end up going there and wow has my life changed since I read that acceptance letter} and I had my entire senior year ahead of me.

Life was... high schoolish, carefree, normal.

American Jobs Act

If you were following my tweets last night, it was pretty clear that I am a fan of the American Jobs Act proposed by President Obama.

View the text of the speech here. One of my favorite parts:

"Ask yourselves – where would we be right now if the people who sat here before us decided not to build our highways and our bridges; our dams and our airports? What would this country be like if we had chosen not to spend money on public high schools, or research universities, or community colleges? Millions of returning heroes, including my grandfather, had the opportunity to go to school because of the GI Bill. Where would we be if they hadn't had that chance?"

Bottom line is, we need our Government. We need action from our Government. Anyone who argues for less or no Government is ignoring the good that has and will come from it. I will be writing to my Representative Erik Paulsen and to my Senators Amy Klobuchar and Al Franken, urging them to vote - now - for the American Jobs Act. We need action to get our economy moving. Clearly, tax loopholes and breaks for large corporations hasn't been getting the job done. If the private sector won't help create jobs, our government must.

I urge you to contact your elected officials and ask them to vote through the American Jobs Act.

Low-brow Chicken Pot Pie

Low-brown chicken pot pie. It's tasty, but not very sophisticated.

Low-brow Chicken Pot Pie

2+ boneless skinless chicken breasts

1-2 bags of frozen vegetables, thawed

Equivalent of 1 can cream of chicken soup

1 cup Bisquick

1/2 cup milk

1 egg

Seasoning to taste - salt, pepper, celery salt, etc

Cut cooked chicken into pieces of your desired size. Combine chicken, vegetables, soup and plenty of seasonings in a casserole or pie pan. In a separate bowl combine bisquick, milk and egg. Once combined, pour bisquick mixture on top of the chicken and vegetable mixture. Bake at 400 degrees, about 35 minutes or until your bisquick top has cooked through and is starting to brown.

Soon it will be comfort-food weather and I can admit to making pot pie without shame!

The Second Year

Wow. I can't believe I've missed the second anniversary of our homeownership!

The first year was a year of progress. This year has been a year of.. catching our breath.

We haven't made any significant house progress, but I am ok with that. We wouldn't have been able to sustain the pace we set for our first year! I feel less defined by the things we still haven't done - like painting a few rooms and tearing out the bathroom wallpaper. I can check living room art off my list though!

Our yard isn't in great shape this year. I am hoping that with fall I can do some serious work on the north side of the house and get our grass back in shape. We made the decision to go without a chemical lawn service this year - which has left our lawn in a worse appearance than if we had used a service. {but the environment thanks us for skipping the chemicals... so that's much better than the appearance of a green lawn in my book.} We did add a fence and are net +1 tree {removed 1, added 2}, our vegetable garden doubled in size, we glass-blocked two windows, we have added additional rain barrels, a monster sized deck and Joe is working to remove a wall in the garage. So we haven't been lazy!

I hope the next year brings a few decorating projects {a nursery, please! if anyone spots the stork, tell him we really hope he'll stop by} and some minor construction {removing the rest of the garage wall, removing a doorway and converting it to a wall in the office.} We are also on the hunt for a truly organic lawn care service {or a DIY plan} that can help get our lawn back into shape while being sensitive of water standards in our local watershed district.

Skinny Chicken Enchiladas

I made the Skinny Chicken Enchiladas from Skinnytaste and they were incredible!

They had a small amount of hotness to them, but not unbearable. They were easy to put together and warmed in little time. I'm thinking they could be prepped ahead of time and refrigerated - but I imagine that would double your bake time to warm them up. One enchilada was more than enough for me, although Joe had two - so keep the serving quantity in mind if you are cooking for several people.

The Minnesota State Fair 2011

I didn't take many photos at the fair this year - it was more of a food tour with the few photos I took.

Tradition dictates that Joe and I take a photo in a black and white photobooth - we've done it every year since we started dating. I messed it up this year by not looking at the right spot in the booth! Ooops..

I always take into consideration the Heavy Table's State Fair review - but I didn't try as many items as I had hoped. We attended the fair with my family - always a good time, but much less food focused than if it were just Joe and I going. From the Heavy Table's top ten list I tried the Honey Lemonade {sweet, cooling, and sipable. Perfect for hot weather, not an easy item to chug but instead to just savor as you walk. Find something salty to pair with it!} and the Minneapple Pie {with cinnamon ice cream - duh - and perfect to share. Way better than Mickey D's "apple" pie.} Of course, I had to have the Pickle Chips {mmmmmm} which earned a HT honorable mention in the sides category.

My embarrassingly awesome family.

Texas Oatmeal Chocolate Chip Cookies

Cookies. I am not the best at baking them. Inevitably, something goes wrong. They spread too much, I burn them, they are too dry, etc. I continue to hunt for the perfect recipe, however, because I.love.cookies. {and I can't say cookie without breaking into a bit of Gru...}

My best friend Sarah's mom sent me her recipe for Texas Oatmeal Cookies. They are about as close to perfect as I can find. They are thin {but not too thin} and the right combination of chewy and crunchy.

Texas Oatmeal Cookies

2 cups brown sugar
1 cup shortening
2 eggs
1 tsp. lemon extract {I didn't have any, so I subbed with vanilla extract, in addition to the vanilla already called for}
2 tsp. vanilla extract

2 cups quick cooking oats
2 cups sifted flour
1 tsp. baking soda
1 tsp. baking powder
1 tsp. salt

Optional: 1 cup of mix-ins. Chocolate chips, raisins, nuts, craisins, etc.

Combine the first five ingredients - beat until fluffy. {again... fluffy!}
Stir in oats.
Add remaining dry ingredients {including optional mix-ins} and stir well.

Drop slightly rounded tablespoons of dough onto parchment-lined cookie sheets. Bake at 350 degrees, 10-15 minutes {right in the middle - 13 minutes - worked best for my oven} until golden brown on edges. Let rest on cookie sheet a few minutes before transferring to a wire cooling rack.

My version has a cup of semi-sweet chocolate chips in them. They come close to my favorite Kashi cookies, and at a fraction of the price.

Skinnytaste - where have you been my whole life!?!?

I just learned of this website from a message board I frequent and I wish I had learned of it sooner. I'm not on a diet, but I am all for eating freshly prepared meals that are lower in fat and calories, high in nutrients and taste. But Skinnytaste - "Diet" food that looks good!? And appears to taste good!?

S.O.L.D. Sign me up!

I made the knockoff Chipotle rice tonight - fantastic! It truly does taste just like Chipotle's rice. I added black beans to make it a bit more complete because it was my dinner. I'm planning to make her chicken enchiladas on Friday.

Book Review: Sarah's Key

This has been the summer of the non-beach reads. I've read very little, but what I have read has been of a serious tone. I've actually read two books pertaining to life during World War II - both fiction - and I loved them both. Most recently I read Sarah's Key by Tatiana De Rosnay.

Switching between life in 1942 in Paris and Paris in 2002, the story follows several lives. Sarah in 1942 and Julia in 2002. Julia, an American-born journalist, has been assigned to report about the Vel' d'Hiv' roundup from 1942. Sarah and her family was ripped from their home during the roundup, only after Sarah locked her brother in a cupboard, promising to return to him but not knowing the truth of what was in store. Through the research, Julia learns that her and Sarah's lives were connected, and it becomes an emotional, shocking journey.

Sarah's Key left me wanting a bit more, wanting to be involved in the character's lives and wishing even more that I could turn back time and take the pain away. I fear that I could easily give away too much of the story, but I really enjoyed this book. Highly recommended to all! Of course, please read it before you see the film. In my opinion, the movies always ruin the books.

Buttermilk Biscuits

I had leftover buttermilk from last week's red velvet cupcake baking, so what better to make than biscuits?

Baking Powder Biscuits
2 cups all-purpose flour*
1 tablespoon sugar
3 teaspoons baking powder
1 teaspoon salt
1/2 cup shortening
3/4 cup milk

Heat oven to 450ºF.
In medium bowl, mix flour, sugar, baking powder and salt. Cut in shortening, using pastry blender (or pulling 2 table knives through ingredients in opposite directions), until mixture looks like fine crumbs. Stir in milk until dough leaves side of bowl (dough will be soft and sticky).
Place dough on lightly floured surface. Knead lightly 10 times. Roll or pat 1/2 inch thick. Cut with floured 2- to 2 1/4-inch round cuttter. Place on ungreased cookie sheet about 1 inch apart for crusty sides, touching for soft sides.
Bake 10 to 12 minutes or until golden brown. Immediately remove from cookie sheet. Serve warm.

*If using self-rising flour, omit baking powder and salt.
For Buttermilk Biscuits - Decrease baking powder to 2 teaspoons; add 1/4 teaspoon baking soda with the sugar. Substitute buttermilk for the milk. (If buttermilk is thick, using slightly more than 3/4 cup may be necessary.)

Betty Crocker, once again, didn't let me down. Delicious warm, topped with jam {my favorite - Hero Red Currant} or reheated the next day with some cheese and bacon, no complaints out of Joe or I. They also require very little time, are healthier and tastier than biscuits in a vacuum can.

Red Velvet Cupcakes.

My neighborhood is having a block party on Friday, and I was asked to bring a dessert. Perfect! Joe and I attended a wedding last weekend that served red velvet cupcakes with cream cheese frosting.... and I honestly can't stop thinking about the cupcakes. Y.U.M. After asking on Twitter, I was given a suggestion to try the red velvet cupcake recipe from Annie's Eats. Minimal effort required, maximum payout. Delicious!

Red Velvet Cupcakes
Yield: about 24 cupcakes

Ingredients:
2½ cups cake flour
1½ cups sugar
1 tsp. baking soda
1 tbsp. cocoa powder
1 tsp. salt
2 large eggs
1½ cups vegetable oil
1 cup buttermilk
2 tbsp. (1 oz.) liquid red food coloring
1 tsp. vanilla extract
1 tsp. distilled white vinegar

Directions:
Preheat the oven to 350° F. Line cupcake pans with paper liners. In a medium bowl, combine the cake flour, sugar, baking soda, cocoa powder and salt; whisk to blend. In the bowl of an electric mixer, combine the eggs, vegetable oil, buttermilk, food coloring, vanilla and vinegar. Beat on medium speed until well blended. Mix in the dry ingredients on low speed and beat until smooth, about 2 minutes.

Divide the batter evenly between the prepared liners. Bake, rotating the pans halfway through baking, until a toothpick inserted in the center comes out clean, about 18 minutes. Let cool in the pans 5-10 minutes, then transfer to a wire rack to cool completely.

The only thing that I did differently is that I only had natural colored vanilla extract, so my cupcakes have a slightly more brown color to them.

Annie's Eats suggests cream cheese frosting - but I am a fan of buttercream, so I whipped up (ha!) a batch of Betty Crocker's version of buttercream frosting.

I've never piped frosting onto cupcakes before - but I wanted to get fancy to win over the neighborhood. {Our dogs bark a lot, we could use whatever help winning people over that we can get!} It was much simpler than I imagined - I'll be doing this from now on!

Last night I took a cooking class with a few friends - Summer Splendor - at Whole Foods Calhoun. The menu was straight out of a summer garden - much of it I could make at home with few additional ingredients. Basil Infused Lemonade, Four Vegetable Caprese Salad, Zucchini Carpaccio, Seasonal Salad, Scallops with Saffron and Hand Crushed Tomato Sauce and Sugar Roasted Plums with Toasted Almonds.

I loved every single recipe in this class - but if I had to pick a favorite it would be a tie between the scallops and the sugar plums! Both were simple, but could be beautifully presented. The recipes required almost no serious kitchen skills and little time - a huge plus for someone wanting to make a special meal for a loved one.

Scallops with Saffron and Hand Crushed Tomato Sauce

12 sea scallops, patted dry

2 tablespoons butter

2 tablespoons olive oil

1/2 teaspoon saffron threads

1 pint cherry tomatoes, crushed with your hands or a potato masher

10-12 leaves of basil, shredded

2 cloves of garlic, minced

Zest of one lemon

Serves 4

Directions: Heat the butter and olive oil until it shimmers. Salt the scallops on each side and sear, turning once, until a golden brown crust develops on each side, about two minutes per side. Remove from the pan, add saffron to pan and stir until golden. Add crushed cherry tomatoes and cook until carmelized, then remove from heat and stir in lemon zest, garlic and basil. Serve over scallops.

Sugar Roasted Plums with Balsamic Vinegar

8 plums, sliced

1/2 cup water

1/2 cup balsamic vinegar

1/2 cup sugar

1 vanilla bean, split and scraped

Zest of one orange

1/4 cup sliced almonds, toasted then crushed

Serves 8

Directions: Place everything but the almonds in a medium skillet and bring to a simmer. Simmer until plums are soft and liquid is syrupy, about ten minutes. Remove from heat. Serve over ice cream, topped with crushed almonds.

The classes at Whole Foods are fantastic - I've blogged about them before - so if you have an opportunity to take one... DO IT! Ani - the Culinary Director at Whole Foods - makes the class fun, simple to understand, explains easy substitutions and as an unrelated-to-cooking fun fact - always has fun earrings on. Look for an updated calendar in the end of August, and sign up fast because classes fill up quickly!

Meet Suge!

He was rescued by Minnesota Boxer Rescue with help of Pilots N Paws. PNP arranged an emergency flight for Suge who had been sitting in a shelter in KY with no veterinary care, in his own feces and urine. So heartbreaking!

Despite the circumstances, Suge seems to be in pretty good spirits. His eyes seemed to show some gratefulness to his human saviors in this video:

Suge is being cared for by a MNBR partner clinic - the Otter Lake Animal Care Center in Hugo Minnesota. According to the MNBR Facebook page, Suge will need at least 2 surgeries to repair his fractured pelvis and back leg(s).

It hurts me that someone could hit him with their car and leave him to die on the side of the road. I am sure the initial hit was an accident - but to leave him on the side of the road was a decision someone made. It's infuriating. Suge was picked up by Animal Control and brought to a shelter... and the shelter didn't provide him with any veterinary care because of limited funds. Of course, it's even more frustrating that a shelter couldn't even provide enough service for Suge to lift him out of his own waste and clean him up. I get tears in my eyes just thinking about it. Hopefully that is the end of his troubles now that he is in Minnesota. If you have any room in your budget this month, please consider making a donation to MNBR for Suge's hospital bills. Wow - Details on the OBL Raid

Wow. This story had my jaw on the floor, chills down my spine.

Details of the OBL Raid on NPR Morning Edition.

I would like to think that I could be as selfless and as brave for my country, but know that I couldn't be. The part that struck me was the contrast between the women - unknown if they have suicide vests on - and the SEAL that took the women in a bear hug to absorb the blow if they did detonate a device. The SEALs shot one of the women not to kill, but to just startle and injure enough to make their jobs easier, full knowing that she could have been intending to blow them up. Thankfully, she didn't, but I can't imagine making that decision. I am impressed by the training and restraint the SEALs possessed to command such control.

Ruff House Canine Social Club

On Monday night Joe and I stopped by the Ruff House indoor dog park.

We have two big boxer babies - they hate when it's too cold, too hot or too wet. As much as I love our dogs, I hate when they have so much energy that they use our house as a jungle gym. Our furniture can only be doggy-rearranged so many times in one day before I am ready to pull my hair out.

I was reading on Sidewalk Dog and the indoor dog park post caught my eye. Ruff House intrigued me - I remember hearing about it/seeing a poll about an indoor dog park from a Secondhand Hounds post on Facebook.

Ruff House has a good sized (7000 square feet) space in a warehouse in Edina {practically Eden Prairie.} The space is basic, but clean, and I was surprised to see a few pieces of {most likely thrifted} lawn furniture for the humans. They have a dog wash station, bathrooms, and cleaning supplies {green! vinegar and water, plus rubbing alcohol} for dog messes. You must register your dogs {temperament inspection, plus proof of vaccines - something I wish was enforced at the outdoor dog parks} and you can either pay a walk-in fee {limited times} or you can buy a pass which grants you 24 hour access to the park. We were able to get a discount for our first visit {yay!} and we spent about an hour playing with 4 other dogs.

The pros: climate controlled environment; vaccine controlled environment; reasonably priced; offers human restrooms; dog washing station is convenient; separate large and small dog areas {similar to the AHS's Yappy Hour program.} Non-members must come on set {staffed} hours but members have 24 hour access with their personal key fobs.

The cons: It wasn't an incredibly hot day on Monday but the place was stuffy with 6 dogs and 5 humans inside. If it were busier it might be unbearable on the hottest of summer days. It isn't staffed 24 hours, so you are somewhat on your own as far as late night/off hours safety - however the owner {??} Juli mentioned that her husband is an Edina Canine PD Officer and that he is happy to make the park a regularly patrolled spot.

I can't see us being year-round members, but the option of a day-visit during select hours works for us on the off chance it's too rainy to get our dogs outside. I can also see this as a viable option in the winter - we may consider a winter season pass if the snow/ice becomes unbearable for the dogs. The price was affordable enough {$8 for 2 dogs} that I wouldn't feel guilty popping in once a week on the day/visitor pass option.

I hope that the business succeeds - I do see a real need for the service that they provide. They are having a grand opening party on August 12th - I'm sure I'll see more press leading up to that event!

If given the opportunity I know I could fall in love with Matt Damon {sorry Joe.} I've talked about him once before - but every time I hear about him in the news I like him even more.

Seriously. He's good looking, he defends teachers against the "gotcha" {ha!} media, he actually does humanitarian work as opposed to just talking about it for publicity, he believes passionately in raising strong women, he's good looking {seriously, have I mentioned that?} and he has a fantastic sense of humor.

Water {pt 2}

Joe and our neighbor Mike installed two glass block windows last week - and so far - the basement has been dry. This makes me want to dance!

Glass block windows aren't the most attractive things, and this isn't the most attractive picture. We have a dark, concrete block basement. Not just any concrete basement, however. Pink concrete block - because of all of the "improvements" the previous owners could have made to the house, they decided to paint the cinder blocks.

We went with the block window that has a vent {center, duh} so if we chose to get some fresh air in the basement via the block windows, we still can. I'm glad for that option. I'm almost wishing for a deep soaking rain so we can put the windows to the test!

I need some strength, some inspiration right now, and all I'm coming up with is some Kanye.

Today was a difficult day. I paid the $114 doctor bill from my miscarriage AND I had the pleasure of taking a phone call from Viacord - looking to get us information about saving the blood from our baby's umbilical cord.

I'd be 19 weeks pregnant tomorrow - meaning Joe and I would be taking bets about the sex of the baby and I'd be scheming up fun ways for us to learn it together. We could be narrowing down baby names. I could finally have something {someone!} to blame for my hip stretch marks. The spare bedroom would be starting to transition to a nursery.

Truth is, we aren't going through any of these things right now and it sucks. I'd like to believe that things happen for a reason, but sometimes things happen that you can't explain to yourself. Today has been an especially hard day, and I'm struggling with thinking positively. This can only make me stronger, right? It doesn't always feel that way.

Water

Water ~~under the bridge~~ in the windows. Specifically, the north basement windows.

Yeah. The previous owners of our home said that in roughly 30 years, they never had water in the basement. Which, to be blunt, is a load of shit. We've had water in the basement about a half dozen times {honestly, I stopped counting} in the two years we've owned our home. Thankfully, the basement is unfinished so it hasn't ruined anything{yet} but we are taking steps to make sure nothing has the opportunity to be destroyed by water, mold or mildew.

Joe is thinking about tackling glass block windows this evening. We have a neighbor that is a block layer by trade, so he has volunteered to give Joe a hand at the project. If tonight works out for both of them, we are going to try and eliminate a large source of stress for Joe and I by blocking out those windows. The plan:

1. Buy pre-fabricated glass block windows {with vents} from Menards. Joe has already checked - they stock the size we need.
2. Remove our old basement windows - making sure to scrape out all adhesive, paint, caulk and whatever else we might find.
3. New glass block windows need to be framed in and shimmed until level and fitting as tight as possible.
4. Once tightly shimmed in the window opening, mortar needs to be filled in around the window, from both the inside and outside of the window.
5. Mortar needs to set.

It seems fairly straight forward {I hope I didn't just jinx it} but I think we can tackle it. Of course, by "we" I mean them. I'll be good for keeping them hydrated {beer time!} and fed {chicken on the grill?} while keeping the dogs and cats at bay.

By the looks of my blog - all we are doing is cooking/eating!

My sister-in-law Brenna and her good friend Amy have been making a variation of these bars on an almost weekly basis for a few months now. They are seriously that good!

The version I made had 1/2 cup walnuts and 1/2 cup dried cherries in place of the pecans. The whole wheat flour that the recipe calls for really gives a rich, dense taste to the bars. Pressing them in the pan felt tricky - they seemed too sparse - but they really filled the pan.

I think my next version might have to be cashews and golden raisins. Enjoy!

Summer Green Pea Salad

This article caught my eye on Thursday. I am a true Minnesotan when it comes to loving cold summer salads! The only change that I made was that I added bacon... everything is better with bacon!

GREEN PEA SALAD

Serves 6 to 8.

Note: Here, the traditional pea salad is upgraded with fresh herbs, fennel seed, lemon zest and feta cheese. Adapted from "The Spice Kitchen," by Sara Engram and Katie Luber with Kimberly Toqe .

Ingredients

14 oz. defrosted frozen peas or freshly shelled peas (not cooked)

3/4 c. feta cheese, crumbled

3 shallots, cut into small dice (1/3 c.)

5 to 6 tbsp. regular or low-fat mayonnaise

1 tsp. freshly chopped tarragon

1 tsp. fennel seed

Finely grated zest of 1/2 lemon (1 tsp.)

Salt

Freshly ground black pepper

** 5 strips of bacon, crumbled

Directions

Combine the peas, feta and shallots in a mixing bowl. ** Add bacon crumbles to pea mixture.

Stir together the mayonnaise (to taste), tarragon, fennel seed and lemon zest in a medium bowl.

Add the mayonnaise mixture to the pea mixture, stirring gently to incorporate. Season with salt and pepper to taste. Serve immediately, or cover and refrigerate for up to 4 days.

Cinnamon-Topped Rhubarb Muffins

Call me crazy, but I've had a strong desire to do some baking.. and it's been 90+ degrees in Minnesota for the last week. Hot weather + one ever expanding rhubarb plant + desire to bake = Cinnamon-Topped Rhubarb Muffins.

I didn't dice up my rhubarb as fine as I assume the recipe wanted, but I wanted to taste the tangy chunks of fruit. I also filled my muffin cups about 3/4 full instead of the suggested 1/2.

I will absolutely make these muffins again - with one minor change. The cinnamon/sugar/butter mixture it calls to sprinkle on top had a 'sinking' effect on the muffins, which I didn't love. I actually topped my muffins with some Sugar in the Raw, before and after baking, and I think that skipping the cinnamon/sugar/butter mixture and substituting SITR and a sprinkle of cinnamon would be perfect.

As my sister Tana said, these muffins would even be great with ice cream. Sounds like my kind of breakfast!

On Saturday Joe and I bought a new {to us} car!

We turned our leased Jetta in a few months early and purchased a 2007 Passat Wagon 3.6l VR6 4Motion. It is the car we've wanted for about 3 years, but was incredibly rare to find. We are so glad that one came along on a trade in. It will no doubt be a competition to see who is able to drive it each day.

My anger might be premature, or it might not be - as our tax laws {corporate and personal income} really do need work. I'm looking forward to Thursday's interview to help clarify the interview.

This morning on NPR I heard a story about News Corp.'s tax statements. I was astonished - and outraged - at what I was hearing.

News Corp. Received Billions in Tax Refunds.

From the story: "Over the past four years Murdoch's U.S.-based News Corp. has made money on income taxes. Having earned $10.4 billion in profits, News Corp. would have been expected to pay $3.6 billion at the 35 percent corporate tax rate. Instead, it actually collected $4.8 billion in income tax refunds, all or nearly all from the U.S. government."

$4.8 billion dollars in tax refunds. Not tax cuts or tax breaks, refunds. They have clever accountants that are able to work the US tax code to their benefit with off-shore accounts and subsidiaries. The United States Government was essentially robbed {harsh choice of words, yes} of $8.4 billion dollars {the $3.6b that they would have been expected to pay but didn't - plus the $4.8b they received as a refund.} That $8.4 billion dollars could do many things - help pay down our debt, reduce the budget deficit, help fund social programs, help fund federal highway projects, or anything else that our National Government does.

Please, listen to the story. It is 3 minutes and 47 seconds of your day that I can assure you will not be wasted. If you aren't mad, then honestly, you just aren't paying enough attention.
